Satisfying Summer Salsa


T loves tomatillos, but doesn't really love fish.  This salsa made our steelhead trout palatable even to him.  The tart tomatillos, rich tomatoes, sour lime, hot chili pepper, and sweet mango combine in a perfectly balanced topping for grilled fish, seafood, poultry, and pork.

Tomatillo Mango Salsa
4 medium sized tomatillos
1 mango
1 green onion
7 cherry tomatoes
1 chili pepper (use your favorite, hot or sweet)
1/4 cup chopped cilantro
Garlic
2 teaspoons ground cumin seeds
Juice of 2 limes
Salt, pepper

Chop fine tomatillos, mango, onion, tomatoes, pepper, and garlic. Combine all ingredients.
