Relishing Summer


I don't remember when it was that I started on this path of quick pickling every fresh produce I came into contact with, but now that I've begun I cannot seem to stop. When T requested tomatillo relish to top his weekend brats, I was happy to oblige him.  The resulting quick pickle is tangy and sweet, with a tad more complexity than cucumber relish.

Tomatillo Relish
2 tomatillos, husked and diced fine
1/4 cup white onion, diced fine
1/2 cup water
1/4 cup sugar
3 tablespoons apple cider vinegar
1/2 teaspoon salt

Bring water, sugar, and vinegar to a boil and whisk until all sugar is dissolved.  Stir in tomatillos, onion, and salt.  Chill.

What a great idea frimp! I have some extra red hots from last year's pickling (my Aunt Della shared her recipe with me, and the resulting pickles were fantastic as well as pretty) and this weekend's Midsommar festivities call for some fun flavors. I will post results...
