Lutfisk Loyalty

The American Swedish Institute in Minneapolis serves 700 pounds of lutfisk at their annual Lutfisk Dinners.  Three seatings lure hundreds of hungry diners intent on enjoying this time-tested custom.  In decades past it was easy to find the lye-cured fish at hundreds of local churches and fraternal organizations across the state, as well as in individual family homes.  Now, fewer places indulge in this Christmas tradition, so those that do are feeding more people than ever.

I find it refreshing to see the long lines of eager partakers of all ages and races.  Lutfisk dinner is one of my favorite meals of the year.  Yesterday I witnessed four people new to lutfisk braving the experience and tasting it for the first time.  None were completely sold, but I have a feeling they'll return next year and try it again.
