Celebrations and kransekake!
Our weekend was full of celebrations including the most beautiful wedding ever in the history of beautiful weddings. Of course, being the mother of the bride I carry a slight bias. A perfect day for a wonderful child.
Kransekake is a Norwegian (and the Danes also claim it, and most Scandinavians serve it) wedding cake that wise eaters also put together for any special occasion (baptisms, Christmas, New Year's Eve, etc.) because it is delicious! The dough is made from almond paste, sugar, and egg whites. The gluten-free, dairy-free pastry is typically decorated with flags and flowers. Kransekake is commonly served from the bottom up, with pieces torn from the rings. The center is hollow, although I'm told some folks sneak a bottle of aquavit into the middle. A fitting spirit for a celebratory dessert.
