Gone Batty

There are as many recipes for chicken wings as there are moods. Sometimes I am in a hot mood. Sometimes, I crave a gentler savory wing. For Halloween this year, all signs point to sassy sweet and saucy.

Bat Wings
Serves 2 - 4

12 chicken wings
3 tablespoons Old Bay Seasoning
2 teaspoons each paprika, cumin, garlic powder, and ginger
1/4 teaspoon cayenne
1/4 cup honey
1/4 cup Sriracha or your favorite hot sauce
Juice from half a lime
4 tablespoons butter
 
Toss wings with dry seasonings and place in single layer on baking sheet lined with parchment paper. Bake at 375 for 5o minutes, flipping wings half way through baking.

Bring remaining ingredients to simmer over medium heat in small saucepan, stirring frequently and adjusting measurements to your taste (more hot sauce if you like fire, more honey if you like sweet). When butter is melted, remove sauce from heat.

Toss wings with sauce and return to oven for additional 10 minutes. Serve hot with ranch or buttermilk dressing on the side.
