Warm Bread on a Cold Day

Nothing beats a cold Minnesota day when our only responsibilities are camping out on the couch and enjoying the final hours of a three day weekend. The only thing we needed was something warm and fragrant baking in the oven. A quick pantry search and I found a jar of dry ingredients for making chocolate chip quick bread. I received the bread mix as a thank you this fall for volunteering with Cooking Matters, and it was a perfect afternoon treat.

Chocolate Chip Oatmeal Quick Bread
1 cup all-purpose flour
1 cup whole wheat flour
1 cup rolled oats
1/2 cup sugar
1/2 cup brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup walnuts
1/2 cup chocolate chips
1 1/2 cups buttermilk
2 large eggs
1/4 cup melted butter

Butter and flour loaf pan; preheat oven to 350 degrees.

Combine dry ingredients. In separate bowl whisk together buttermilk, eggs, and butter. Stir wet mixture into dry ingredients until lumpy batter forms. Spread in prepared pan. Bake until inserted wooden skewer comes out clean; about 50 minutes.
