Consider the Cucumber
Although the quirky little guys aren't exactly vitamin-laden powerhouses, refreshing and cool cucumbers are my go-to fruit all summer long. High water content keeps them up to 20 degrees cooler than the outside air. Their temp and the antioxidants they contain make for a nice eye patch when you need to reduce your puffies (this advice is coming from a girl whose sleepless nights are causing her under eye bags to carry luggage). Cucumbers brighten our meals whether quick-pickled, crunchy-raw, or pureed in chilled soup. Best though is when they hang out in a summer cocktail.
This week in Called to the Table two of my loves gently collide: Teacher T and cucumbers. Thirst quenching and fizzy, Cucumber Coolers and Bloody Mary-Ann Gingers both contain Cucumber Cubes (ice cubes made from pureed cucumber, lime, and fresh ginger).
