Those Girl Scouts are soon going to be out and about hoofing their cookies. They've received lots of bad publicity for killing the rainforests. But gosh I do love a good cookie. These lemon flavored melting moments remind me of Lemon Chalets. And they are ecologically sounds. Just ask my hips.

Lemon Melting Moments
Makes about 24 cookies

1 cup butter
1/3 cup powdered sugar
Zest from 2 lemons
1 cup flour
2/3 cup corn starch

Mix together butter, sugar, and zest. Add flour and corn starch until dough forms. Roll teaspoon-sized balls and place on ungreased baking sheet. Bake in preheated 325 degree oven 12 to 14 minutes. Cookies should remain pale and not brown.

Cool and frost with powdered sugar and lemon juice glaze.
