Turn Back Time for Breakfast
Daylight Savings Day is one of the greatest days of the year. I obsess about turning back the clock, true time, what time it used to be, whether it will be the same time tomorrow. It is a time-freak's Twilight Zone Holiday.
Today we gained an extra hour to sleep, play, watch football, rake leaves, clip cat claws, wash laundry, blog... I took advantage of the hour by baking up my new favorite breakfast. If you want to serve this for friends at brunch, go all crazy and add toast or scrambled eggs.
Roast Fall Vegetable Breakfast
Serves 2
1 delicata squash, peeled and seeded
1 red or yellow sweet pepper, seeded
1/4 large red onion
6 turkey breakfast sausage links
Good handful of fresh cranberries
2 sprigs rosemary
1 - 2 tablespoons olive oil
Salt and pepper
Chop vegetables into bite sized chunks. Combine all ingredients and place single layer on large baking sheet. Bake in preheated oven at 375 degrees for 30 minutes, or until vegetables are caramelized and soft and sausage is cooked.
