Food Day

We officially celebrated Food Day on Monday. Heard of it? If not, here is a brief description from the Food Day website:
Food Day seeks to bring together Americans from all walks of life—parents, teachers, and students; health professionals, community organizers, and local officials; chefs, school lunch providers, and eaters of all stripes—to push for healthy, affordable food produced in a sustainable, humane way.
Across America politicians, farmers, non-profits, chefs, and individuals joined in churches, homes, schools, and capitals to share our concerns about food systems. We had a huge event on the University of Minnesota campus. I volunteered with Cooking Matters. On stage our chefs did some quick demos and talked about why eating healthy is important. We fed cucumber and mango salsa and whole wheat macaroni and cheese to thousands (OK OK more like hundreds but it felt like thousands!) of university students who visited our booth. They were excited to talk about healthy eating, access to nutritious food, and acquiring cooking skills. Their enthusiasm was contagious!
