Almost Aunt Millie's Waffles


I don't think my Aunt Millie added cardamom to her waffles, and hers were lighter and springier, but on Friday night these brought back memories of waffle suppers shared with her and Grandpa. 

Sparkling Soda Waffles
Makes 4 Waffles

1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1 teaspoon cardamom
1/2 teaspoon salt
2 1/2 tablespoons unsalted butter, melted and cooled
1 large egg
Just under a cup of club soda
Butter for waffle iron

Sift flour, sugar, baking powder, cardamom, and salt into medium mixing bowl. In separate bowl combine wet ingredients. Whisk wet ingredients into flour. Set aside while waffle iron heats. Butter hot iron, add 2/3 cup batter to hot iron and cook until steam no longer rises from iron.

Could this be a dessert also, and what's the jelly on that waffle?

Hi frimp. That is lingonberry jelly. And if you want waffles for dessert, have at it! Waffles are good anytime.
