Game Day Dining
Tonight we shall cheer and celebrate, and revel in the surreality of our team playing in the Super Bowl. To help with the festivities, we'll enjoy several Packer-inspired treats including a pre-game cocktail named for my favorite blond, Matthews Margaritas (also known as Blonds Have More Fun). During the game we'll munch on B.J. Raji's Big Boy Burgers. To make the burgers, top your favorite slider with Wisconsin cheddar cheese and bacon until the cheese melts (especially good with crab or turkey burgers). Serve on toasted buns with lots of this amazing salsa. Win or lose, these Big Boys are as satisfying as a 300+ pound touchdownMatthews Margaritas (a.k.a. Blonds Have More Fun)
Makes 2 servings
Juice of 2 blood oranges and 1/2 lime
3 ounces amaretto
4 ounces agave tequila
Shake all ingredients with lots of ice; serve in glasses rimmed with lime and kosher salt.
Mango-Avocado Salsa
8-12 servings
1 mango
1 avocado
1/2 cup shrimp
1/2 cup red onion
1/2 cup red pepper
1/2 cup cilantro
2 green onions
1 green jalapeno
1 hot red chili pepper
1 garlic clove
Juice from 1 lime
Salt and pepper
Dice all ingredients and toss together just before serving.
This mixture is great with chips, on lettuce as a salad, with grilled fish, burgers, or poultry. For a fun play on bruschetta, add some olive oil and serve over toasted slices of your favorite bread.
