Snow-maggedon Soup and Sandwiches
All week the media were in a frenzy. They were certain that the Pinnacle Weather Moment of the Century was upon us all.
I am not one to believe that snow in Minnesota is much of a news story. But this time the media was correct in predicting more than just a few inches. So yesterday T and I hunkered down (that is a Minnesota term used whenever there is "Weather" and we choose not to leave home until the "Weather" subsides) and admired the blustery beauty of a winter storm. These tasty soup and sandwiches helped to warm T up after his many turns at keeping the driveway clear.
To make a quick tomato soup, heat a tablespoon of tomato paste and a bit of garlic in olive oil over medium low heat for about 30 seconds. Add a can of diced or crushed tomatoes. Bring to a simmer. Add a few cups of chicken broth. Put the whole thing through the blender. Taste. Add a bit of sugar, pepper, basil, etc. Serve with grilled three-cheese sandwiches toasted in equal parts butter and olive oil.
