Quick Pickled Radish


This steak sandwich paired nice with a potato salad based on Nicoise, but the sandwich itself needed a little bump in flavor.  The sandwich consisted of a sturdy baguette, dry-aged t-bone rubbed with peppercorns, provolone cheese, lettuce, and mayonnaise laced with pepper and thyme  I am a lover of all things radish, and had these two little charmers in the fridge just begging to be useful: 


Shaved thin along with white onion, they make a tangy quick pickle.  Simply add white rice vinegar, a bit of sugar, salt, and pepper.  They settle into the cure while the cook assembles the sandwiches and salad, and the pickled radishes add a crunch and bite to a spectacular steak sandwich.
