Pie Crust Cookies


The best part about pie, at least when I was a kid, was the leftover crusts that my mom would cut into strips, dust with cinnamon sugar, and bake into little crust cookies.  As T's pumpkin pie (made using coconut milk instead of evaporated; a switch I highly recommend) was baking, I nibbled on these little crusts and enjoyed sweet crispy cinnamon memories.
