Peanut Butter "Chocolove" Cookies


Holiday baking is upon us!

To abide by a beloved's no-dairy diet, I made these peanut butter cookies using dairy free chocolate rather than traditional chocolate stars or kisses.  Not as pretty, but even tastier than the original version, especially with Chocolove Rich Dark Chocolate (65%) candy bar bites dotting the center of each cookie.

This is my favorite cookie recipe because it is so simple I've got it memorized.  Add bits of your favorite chocolate in the center just before baking.

No-Flour Peanut Butter Cookies

1 cup crunchy peanut butter (I use Trader Joe's all natural organic, no sugar added)
3/4 - 1 cup sugar
1 large egg
1 teaspoon vanilla extract
1 teaspoon baking soda
A little less than one 3.2 ounce Chocolove candy bar, cut into small triangle bits
Preheat oven to 350F.

In a large bowl, beat together all ingredients until smooth.  Drop by tablespoonfuls onto ungreased baking sheet and flatten slightly.  Dot center with triangle of chocolate.  Bake for about 10-13 minutes until golden brown at the edges.

Cool on pan before removing to wire rack to cool completely.

Makes 2 dozen.
