Leftovers Pizza
Greek Pizza?
Yes, you read that correctly. This pizza is one of two that I made using leftovers. The dough is made using half chickpea flour, half whole wheat. I topped it with provolone and parmesan then par-baked until the dough was just starting to crisp. Then added Red Pepper Pesto from the weekend, Calamata olives, pepperocinis, feta, and more parmesan and finished baking.
Back when Brett Favre was a Packer I created a Brat Favre pizza that included green and yellow peppers, thin slices or chunks of beer boiled brats, and lots of Wisconsin white cheddar. T's leftovers pizza (he is not a fan of feta) was inspired by that memory. I used regular white flour dough, mozzarella, Red Pepper Pesto, cheddar brats sliced thin (seriously!), and parmesan. T loved his pizza so much that he finished it, and began eating mine. Even the feta couldn't deter him from the tasty combinations of flavor and texture.
