Cranberry Pear Crisp


More fun with cranberries!  Right in time for Thanksgiving.  These mini-desserts are easy and perfect when only two or three of you are dining.  Butter 2 (or 3) 1-cup ramekins.  In saucepan bring a handful of fresh cranberries, one chopped pear, sugar, cinnamon, vanilla, brandy, and orange juice to a simmer over medium heat.  When sugar is melted, add a pat of cold butter and remove from heat.  Stir in butter until melted.  Fill each ramekin with mixture.

In separate bowl combine flour, sugar, oatmeal, butter, and cinnamon.  Cover fruit as you would any crisp.  Bake in 350 oven until top crisps.  Eat warm with brandied whipped cream.

Now this looks good!!! And since I am the only one around here to enjoy a good cranberry, this is the perfect size recipe!!
