Cranberry Focaccia
We were "iced in" on Sunday morning. There is something cozy about being homebound on a blustery winter day. With few staples in the pantry and facing a fun challenge of creating a tasty meal, I spied a recipe for Sun-dried Tomato Focaccia that begot inspiration for this bread. After rustling around the sad contents of our kitchen, I decided on a dough which swapped dried cranberries for the tomatoes, and topped it with a light combination of basil, onion, Parm-Reg, and pickled mustard seeds.
Have you noticed a lot of talk about pickled mustard seeds lately? More on them tomorrow.
