Macaron Madness

The French confectionary cookie Macaron started causing trendy waves a year or two ago.  Now that they are available throughout the Twin Cities we can finally grab a board and surf a variety of flavors.  Macarons are traditionally made with almond paste, although coconut is sometimes substituted.

Macarons stir memories of my mom's airy Christmas meringues.  She colored each batch either pink or pale green, and flavored the batter with peppermint and chocolate chips.  Less chewy than a macaron, I loved how their dusty crumbs melted on my tongue.
