Garlic Scapes and Basil Pesto


Garlic scapes are the June equivalent to zucchini in August. Seems like every gardener has more than enough to share, and gladly do so.  Whether they take on the kind of giant zucchini lore that has them randomly appearing in baskets outside our front doors remains to be seen.

Their mild garlic flavor is a great herbal note for salads, eggs, pizza, and just about any other savory dish, raw or cooked, that comes out of your kitchen this time of year. Add it to your favorite pesto and that (let's face it, sometimes boring) little sauce pops with new life.

Garlic Scapes and Basil Pesto
Equal parts chopped scapes and basil
Lemon zest and juice
Parmigiano-Reggiano
Pignoli/pinenuts
Olive oil
Pepper

Process all ingredients together until nice paste forms; add olive oil as you go. I like to heat this over low before using it to take out any harsh tones. Fantastic over boiled or roasted new potatoes.
