Rhubarb Ketchup



I put this together this weekend to serve with tasty pulled pork sandwiches.  It is tart and heavenly.  Rhubarb season is fleeting: think outside of the tomato and cook up something unique.

Rhubarb Ketchup
1-2 pounds rhubarb (about 7-10 stalks), chopped
1/2 red pepper, chopped
1/4 red onion, chopped
A good bit of sugar
water to just come up the sides of the pot (as above)
salt to taste

Put all ingredients into a pot and cook down, about 15-20 minutes, until it looks like this:


Mash or push through a sieve if desired.  This makes a nice dense condiment.

i really want to try this! it looks and sounds like it would be good with a lot of things! i'm imagining it with faux-chicken nuggets.

hi stephaniesays, yes this would be delicious with faux nuggets. i've seen other recipes that call for port and orange, which would give a nice complex sweetness. let me know if you try it!
