Leftovers: Added to Red Sauce on Pasta
Grilled Vegetable Salad
Assemble your favorite vegetables and douse them with a good bit of olive oil, salt, and pepper. Skewer smaller vegetables such as cherry tomatoes, button mushrooms, or cut peppers; grill. Toss warm vegetables in large bowl with fresh mozzarella or other soft cheese, balsamic vinegar, and lots of fresh herbs.
