Introducing UM Apples to Jean-Georges
The Chambers Kitchen server placed an arrangement of endive, pear, chili pepper, and chèvre on our table and at first taste our dreary winter afternoon transformed with the promise of a new year filled with bright flavors. Chambers was like that. Chef Jean-Georges Vongerichten and his staff challenged and excited my palate.
This salad is based on the flavors of that day and underscores the snappy sweet University of Minnesota apple varietals Honey Crisp and SweeTango.
Apple Jalapeno Salad with Honey-Ginger Vinaigrette
4 cups mixed greens
1/2 cup cilantro
2 jalapenos, sliced
4 ounces chèvre
2 Honey Crisp or SweeTango apples, sliced
Salt and pepper
Vinaigrette
Use microplane to grate 1/2 to 1 inch of peeled fresh ginger, mince fine 1 small shallot; add 2 tablespoons honey, 1 ounce apple cider vinegar, 2 ounces apple cider, 2-3 ounces olive oil, salt and pepper.
Generously serves 4.
