Winter reprise

In Minnesota we are experiencing a slight warm up from winter's barrage of snow and cold. Even a winter lover like me can appreciate the promise of spring. The coming season brings with it two of my favorite things: farmers markets and grilling.

Until then, we make due with whatever fresh stuff we can find. Quick Pickled Salsa is great on tacos, sandwiches, salad, and just about anything else you can think of to put it on. It brightens up your meal and your day.

Settle in kids, tomorrow winter returns. Shoveling is good exercise, and snow is an excuse to reach for another cup of hot chocolate.

Quick Pickled Salsa
1/2 cup water
1/4 cup apple cider vinegar
1/4 cup sugar
1 teaspoon coriander seeds
1 teaspoon fennel seeds
1/2 teaspoon salt
1/2 lime, cut into wedges
1 cucumber, sliced thin
1/2 red onion, sliced thin
1/2 cup mango, chopped
1 green jalapeno, sliced thin
1 red chili pepper, sliced thin

In saucepan bring water, vinegar, sugar, coriander, fennel, and salt to simmer; stir occasionally and cook until sugar is dissolved, about 3 minutes. Remove from heat and stir in 1 cup ice cubes. Place sliced fruits and vegetables in large bowl or jar. When ice is melted, pour brine over fruits and vegetables. Chill until ready to eat.
