Esprit de Eggplant a la Garbanzo

Eggplants are upon us and there is only so much Eggplant Parmesan one can tolerate. This week's Called to the Table explores a few possibilities. Knead up some flatbread while you ponder. Garbanzo flour is a warm and nutty addition to your favorite pizza dough recipe.
 
Grilled Garbanzo Flatbread
1 package yeast
1 tablespoon honey
2/3 cup warm water
1 1/2 cup all-purpose flour
1/4 to 1/2 cup garbanzo flour
1 teaspoon salt
Olive oil

Combine yeast, honey, and water and set aside 5 minutes or until foamy. Mix in flour and salt and knead until soft silky dough forms. Set to rise in clean bowl with several tablespoons olive oil. Cover and rise to double, about 2 hours.

Divide dough into 4 small balls. Roll very thin. Grill over direct heat, turning once.

that bread was SO GOOD. i bet it would make a great crust for flatbread pizza!
