If you and I were waking up in Sweden this morning, we might begin our day by raising the flag in honor of Sweden's National Day. Perhaps we'd enjoy a hike or parade, listen to a speech, maybe take in a concert, and throw back a shot of snaps or two and sing a little drinking song. But certainly we'd partake in a good Swedish meal, and certainly we'd have a strawberry cake.
The best strawberry cake I've ever eaten or baked comes from the Pat Sinclair cookbook Scandinavian Classic Baking. You can see the recipe at Pat's blog (click here). I could live on the cream topping/filling alone, but the sponge cake is pretty good as well.
