Cucumber Cool

The heat and humidity are due to return to Minnesota midweek. Time to roll out a few more recipes to cool us down without heating up the kitchen. Use an organic or homegrown cucumber and no need to peel off that beautiful green skin. I love this soup alongside a beautiful red or yellow gaspacho.
Cucumber Avocado Soup
1 large cucumber, roughly chopped
1 avocado, roughly chopped
1/4 cup white onion, diced
2 stalks celery, diced
Generous handful fresh herbs (cilantro, basil, dill, chives, parsley, etc.)
1 garlic clove
Juice from 1/2 lime
2 cups chicken broth
1/2 cup yoghurt or sour cream
Celery salt and pepper to taste

Combine all ingredients in processor or blender and puree. Push through fine mesh strainer. Serve chilled or at room temperature with a splash of good olive oil.
