Christmas Sausage Lefse Wraps


My favorite sausage recipe calls for 86 pounds of ground pork and beef (mostly pork), over 24 tablespoons of seasoning, and hog casings.  This recipe simplifies that monstrous undertaking without forsaking the flavor.  Shape sausage into rectangle burgers and serve rolled in lefse with plenty of pickled cucumbers, radish, and onion, and lingonberry mustard (equal parts lingonberry preserves and your favorite hardy prepared mustard).

Christmas Sausage
1 1/2 pounds ground pork, beef, and veal
1 tablespoon sugar
2 teaspoons salt
1 1/2 teaspoon allspice
1 teaspoon pepper
Zest and juice from one tangerine

Combine seasonings, meat, and zest; gradually add juice.  Shape into patties and grill until internal temp reaches 160 degrees.
