The red of the radish and greens of everything else makes this a perfect salad to serve during the holidays. Serve individually plated.
A good bunch of watercress per plate
Avocado, cucumber, green onion, and radishes sliced thin
Crunchy Parmesan bits
Lots of fresh grated pepper
Dressing: tangerine juice, white rice wine vinegar, honey, mustard, olive oil, salt and pepper
To make crunchy Parmesan bits, melt a thin lacy layer of grated Parmesan in a non-stick pan over medium low heat until just melted (about 4 minutes). Use a non-stick spatula to flip cheese; cook additional 30 seconds. Move cheese to paper towel and allow to cool. Break into bits.
