Pantry Salad


Still cleaning out the pantry in anticipation of farmers markets and fresh goodies.  I had a craving for tabouli so I gathered my tomatoes, cucumbers, fresh mint and parsley, lemon and yoghurt.  Then realized the only grain in our cupboard was wild rice.   No worries!  A wild rice tabouli salad borrows from the best of all worlds.  I added red pepper, red onion, and carrots to create a lovely little lunch.

My garden was generous last year, and this weekend I will consider the canned tomato surplus lining our shelves.  Soup?  Red sauce?  BBQ?  Endless possibilities...
