Blueberry Buttermilk Waffles


The recent waffle trend explosion inspired me to pull out old Bessie (my waffle maker).  Each of these waffles contains 1/3 cup of blueberries so that makes them healthy, right?

BLUEBERRY BUTTERMILK WAFFLES
1 3/4 cup all-purpouse flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 tablespoon sugar
1/2 teaspoon salt
Zest of 1 lemon
3 eggs
2 cups fresh blueberries
1/2 cup butter, melted
1 1/2 cup buttermilk

Preheat waffle maker.

Whisk together flour, baking powder, baking soda, sugar, zest, and salt in a large bowl.  In a separate bowl, whisk together the egg yolks, butter, and buttermilk.  Pour the wet ingredients into the dry mixture and mix with as few strokes as possible.  Mix in blueberries.  Beat egg whites until stiff; fold into batter.

Add batter to waffle maker and cook until done.
